One of my most loved kinds of pasta, the Sedanini, tossed with a creamy Parmigiano-Reggiano and Shiitake and Porcini mushrooms sauce.

COOKING CLASS DESCRIPTION

This class will teach three of the recipes that most symbolize my childhood. These have been the dishes I most often found on my grannies’ tables for the Sunday lunch in Italy. I’ll tell you all the secrets about my Ragù alla Bolognese family recipe, all the tips I inherited from my grannies and mum, and my personal touch, respecting the Bolognese culinary tradition. Also, we’ll prepare the Tagliatelle from scratch. Along with Lasagna, Tagliatelle is the most traditional pasta to pair with the Ragù. We’ll learn to knead and flat the dough with the Kitchen Aid mixer, then reduce them into strips and cook and serve along with the Ragù. The third recipe is made with one of my favorite dried pasta of my childhood: the Sedanini. We’ll toss them with a creamy sauce made with Italian dried Porcini and other mushrooms, enriched with butter, milk, and Parmigiano Reggiano sauce.
